So you’ve caught your fish, now what?

Trout and bass, like any other meat, require a certain amount of care to make it to your table fresh.

There are steps you can take to ensure you get home with a terrifically fresh and delicious meal.

The process starts as soon as you catch your fish.

Upon removing the hook from your fish:

  • Put your fish immediately into a bucket of cool water (At our Fish & Pay Lakes we do not allow stringers. On public fishing excursions stringers are a great option to keep your fish cool.) The cooler the water, the better.
  • Have your fish cleaned as soon as possible after catching. If the fish sit warm for any amount of time natural enzymes will begin to break down the flesh and can cause off flavors.
  • Keep your cleaned fish cold for the duration of time from when they are cleaned until you are ready to cook. A cooler with ice is the best way to transport.
  • Once your fish is home keep it refrigerated and cook or freeze within two days. Trout will maintain best quality for a few months frozen, bass a little longer.
  • When cooking ensure fish flesh reaches 145 degrees fahrenheit.
